Biruh Tesfa (Bright Future) Project and saw firsthand the challenges adolescent girls face in many parts of the world.

?As part of Idol Gives Back, I was able to travel to Ethiopia with the United Nations Foundation and witness firsthand how girls are struggling to overcome poverty,? said David Cook. ?Going to Ethiopia inspired me to give back through my music, which is why I’m donating a free download of ?We Believe,? a song that was inspired by my trip, to every person who gives to Girl Up.?

Girl Up, a grassroots campaign that helps American girls channel their energy and compassion to raise awareness and funds for their sisters in developing countries, is asking supporters to help Somali refugee girls who live in the Jijiga refugee camp. Clearwater, FL (PRWEB) December 24, 2011

Eat Well and Live, a cookbook by cancer survivor Gwynn Palmer, reveals her healing diet for those struggling with cancer and ill health. A former health food restaurateur and currently a Hydro-Colon Therapist, Palmer shares her experience and healthy body repair recipes.

Her focus in the book is to offer a diverse palate of clean healthy food and to keep it simple, delicious and doable. Palmer wrote Eat Well and Live when she was asked to write a cookbook based on the ?allowed? foods list by the very program that she credits with saving her life, Dr. William Kelley?s College Health. ?From a list of the allowed foods on the program, I managed to get pretty creative? the recipes are tasty and can be shared with the family as well.? says Palmer.

Palmer radiates health and happiness, but it took years of researching, learning and fighting illness to reach that place where she is today. She has spent many years studying digestion, allergies, and disease as well as working with experts in these fields. With her extensive background in food, and her passion for cooking and health, it isn?t surprising that Palmer?s patients began asking her to share her recipes? finally she wrote a cookbook.

?I have a passion to help people with the food they eat so that it is actually food that helps make them healthier, as well as being food that tastes good and is easy to prepare,? says Palmer.

Eat Well and Live?s chapters include; how to stock your pantry and what tools you need for your kitchen, what to eat and what not to eat, foods you must avoid at all costs, lots of simple to follow tasty recipes for the foods you can eat, great snacks for work and home, and how to sprout and what to juice.

?Whether you are fighting cancer, chronic illness, unexplained symptoms or want a simple diet of basic good tasting foods to improve your health, Eat Well and Live is the cookbook I created for you, ? says author Palmer.

Many health professionals recommend the book to their patients. Dietrich Klinghardt, M.D. says, ?The information and recipes in this cookbook are not only for those fighting cancer, but for anyone wanting more information and creative solutions for improving their health and well-being. I highly recommend this book.?

Parkinson?s Disease: Take Control with Lifestyle Changes in Brain Healthy Nutrition, Exercise, and Healthy Coping Strategies to Boost Physical and Emotional Resilience

Baltimore, MD (PRWEB) December 28, 2011

There is evidence based support that re-focused nutrition, exercise, and healthy emotional coping strategies may play roles in maintaining optimal health while living with Parkinson’s Disease and other neurodegenerative disorders like multiple sclerosis. In fact, there is widespread interest today in brain healthy nutrition and how to protect and enhance neurologic function, particularly as we age. “Take Charge of Parkinson’s Disease: Dynamic Lifestyle Changes to Put You in the Driver’s Seat” is an unusual how-to book for anyone on the journey of living with PD, from the newly diagnosed to those like author Anne Cutter Mikkelsen’s husband, Mike, who has lived vibrantly with the disease for decades — and for anyone interested in brain-healthy nutrition.

Loss of control underscores this disease that impacts more than one million people in the U.S., their carepartners and families, and the sixty thousand newly diagnosed each year. “Take Charge” espouses making the most of what we can control: what we eat, how we choose to think about our circumstances, and what we bring to our relationships. Read reviews and praise from persons with Parkinson’s and PD and movement disorder health care experts, including the Muhammad Ali Parkinson Center, the Brian Grant Foundation, and the Struthers Parkinson’s Center.

Classically trained in French cooking, author Anne Cutter Mikkelsen is a Parkinson’s carepartner to and advocate for her husband, Mike. A Master Gardener and writer, and former restaurateur and bed and breakfast proprietor, Anne presents more than 80 of her own original recipes and menus that combine a wide variety of anti-oxidant, anti-inflammatory, nutrient-rich ingredients, and culinary herbs and spices known to favorably impact the brain.

Powerfully, Anne tells the personal story of how she and Mike ? an award-winning potter and sculptor ? learned to live vibrantly since his 1993 PD diagnosis. The couple wishes to help cut the learning curve for others facing down a Parkinson?s disease diagnosis. According to Anne, food has been her most effective tool in her quest to create an atmosphere of optimism and anticipation for ?whatever is coming next? through the stages of Mike?s PD.

Mikkelsen, who studied cooking in Provence, France at L?Ecole des Trois Gourmandes with Simone Beck, co-author of Mastering the Art of French Cooking I and II, also is a former TV cooking show personality. In her “Take Charge” recipes, Anne uses familiar ingredients and introduces key ingredients ? among them, ?curcumin,? a component in the spice ?turmeric,? heavily researched for potential neuroprotective properties, and the piney-scented herb, rosemary, shown to improve circulation and stimulate the brain. Family chefs and foodies alike will be comfortable and intrigued with the culinary and, preparation techniques, and brain healthy pantry stocking recommendations.

Chapters of practical information about Parkinson?s Disease is supplied by contributing writer, Carolyn Stinson, on symptoms, difficulties with diagnosis, risk factors, loss and depression, denial, stress, and research at the Cleveland Clinic on potential neuroprotective and symptom management benefits afforded by certain types of exercise.

The metaphor in the book’s title is compellingly personal, too — ?putting you in the driver?s seat.? Anne and Mike know that PD will always be there, along for the ride. However, they have mastered living a good life, relegating Parkinson?s to the back seat as just a passenger. Beyond that fitting metaphor, Mike also happens to be a lifelong collector and creative restorer of automobiles, including the beloved Dodge D-19 Luxury Liner convertible he has owned for six decades. In early 2012, Anne and Mike as co-authors will publish a prequel of sorts to ?Take Charge? — ?The Dodge: Guts, Glory, and Living at Full Throttle? ? that recounts the intertwined life stories of Mike, Anne, and The Dodge.

?Of all the Arts, I return to the lure of the automobile? those with a history, a character and a host of idiosyncrasies, which I desperately want to know and cater to. I?ve recently learned that a car is capable of much more than transportation.? E.A. Mike Mikkelsen.

The accompanying video clip depicts Mike and The Dodge joyfully returning home from gathering holiday greenery for the Mikkelsen home.

Anne is also the author of “From Both Sides of the River: A Family Portrait,” also published in 2011. Both “The Dodge” and “From Both Sides” can be purchased at annecuttermikkelsen.com. “Take Charge of Parkinson’s Disease” is available from Amazon.com, in bookstores, and at http://www.annecuttermikkelsen.com.

Towson, MD (PRWEB) December 29, 2011

The Towson University Marriott Conference Hotel is joining the latest culinary movement sweeping across the country. More and more chefs want locally produced ingredients to incorporate into their menu, and this Marriott hotel restaurant in Towson has joined the ever-growing list embracing the locally-sourced movement.

Towson, Maryland, may not be the first place that comes to mind when one thinks of buffalo roaming, but Chef Bill Rothwell at this Marriott Towson restaurant has been able to find a local source for the featured ingredient in his signature Grilled Bison Meatloaf, served at the hotel?s University Club restaurant.

Chef Rothwell likes to prepare regional favorites using the freshest local products in a way that allows the quality of the ingredients to shine. He has harvested and blended some of the tastiest flavors around this Towson, MD hotel to create an expansive and delicious menu. Favorites on the menu include cream of crab soup, corn fried oysters, jumbo lump crab cakes and the bison meatloaf.

For his bison meat Chef Rothwell goes to Gunpowder Bison and Trading Ranch in Monkton, MD. A family-owned and operated ranch, the Gunpowder Bison Ranch offers bison that enjoy rotational grazing on 70 acres of lush pastures and are naturally raised on a local grass diet, without harmful hormones or feed additives. These healthy and locally raised bison help make the Grilled Bison Meatloaf at this hotel restaurant in Towson a popular dish.

Chef Rothwell prefers to use bison meat as a healthy alternative to beef since it?s full of flavor, tastes very much like a very high grade cut of beef, yet is much lower in fat. He shares the recipe for the grilled bison meatloaf here.

Grilled Bison Meatloaf

1/2 tbsp chipotle peppers

1 tbsp coriander

2 cups low sodium beef broth

2 eggs

1/2 tsp salt

1 tsp black pepper

1 oz soy sauce

3 lbs ground bison

4 oz plain bread crumbs

5 oz shredded mozzarella cheese

5 oz corn

3 oz roasted red peppers

1 tsp chopped scallions

Pre-heat the oven to 250 degrees. Mix together chipotle peppers, coriander, beef broth, soy sauce, eggs, salt and pepper. Mix well and add remaining ingredients. Make sure everything is mixed evenly but not over mixed. Place mixture into meatloaf pan. Pack down tightly and make a small indent in center. Cover with aluminum foil and place in oven. Cook for approximately 2 hours. Remove from oven and rest. Slice into individual servings and grill on both sides. The recipe makes 12 slices.

Chef Rothwell and this Marriott Towson, MD hotel invites journalists to accompany him on a visit to Gunpowder Bison and Trading Ranch where they can watch the bison herds grazing, and shop for the bison meat for his menus. To arrange an interview and outing, contact Jane Coloccia at: janecoloccia(at)gmail(dot)com, or 609-737-2587.

Five Simple New Years Resolutions For a Healthier Diet and a Healthier Planet

Los Angeles, California (PRWEB) December 30, 2011

Celebrity Chef, Gen Anderson, creator and host of Gen?s Guiltless Gourmet, a healthy and eco-conscious cooking series premiering on PBS stations in 2012, unveils her top five New Year?s Resolutions for a ?healthy planet, healthy you.? All of the resolutions call for people to make small changes in their daily diet and shopping habits that have powerful impacts on their health and the environment.

?Consumers can make choices that really affect change in their lives and in the world,? Chef Gen says. ?Every time someone makes a healthy choice for their family and the environment, it sends a message and makes a direct impact. I think that?s an incredibly empowering thing to realize.?

As New Year?s Resolutions for 2012, Chef Gen invites people to commit to these five simple but powerful changes:

1). Participate in Meatless Monday: forgoing meat once a week not only reduces saturated fat and cholesterol in the diet, it also reduces the water, fuel, and grain needed to produce meat and the pollutants and byproducts created by large-scale meat farming. In addition, meatless options like beans and lentils are very budget-friendly.

2). Make healthy swaps: Substitute items like almond milk, vegan cheeses and vegetable margarine for butter and full fat-dairy products in recipes. Swapping one serving of each saves approximately 75mg of cholesterol and 7 grams of saturated fat each day. Raising dairy cows also has a high water and energy cost, so even a small reduction has a major positive impact on the planet.

3). Commit to organic whenever possible: Chef Gen encourages her viewers to shop organic whenever possible. But if an all-organic diet seems out of reach, consider going organic for at least breakfast and snacks. Switching to organic fruit and cereal won?t overwhelm the food budget, and it will spare families and the planet a lot of pesticides!

4). Consider portion control: Face it; many of us just eat too much. Serve a sensible amount and refrigerate or freeze leftovers immediately. Something as simple as portion control will help save on the budget, the waistline and resources.

5). Clean green: Use eco-friendly cleaning products that don?t contain phosphates or harmful chemicals to clean the kitchen and home. This will keep harmful chemicals away from the family and out of the water supply.

As her own commitment for the new year, Chef Gen is resolving to provide a new Meatless Monday recipe on her website every week in 2012 to help people commit to these resolutions!
